Panama has come on leaps and bounds in the last 5 years regarding high end restaurants. Caliope is testament to this progress and, coupled with a really unique venue and interesting decor, I'd say it is a top choice for the discerning diner. We ordered several starters; sea bass, duck ravioli, beef tongue wanton, tuna tataki....all of them excellent, but for me the ravioli was a stand out. For mains we had the pork belly, short ribs and the yucca gnocchi. Once again all excellent....but the subtle flavours of the gnocchi, coupled with thin slices of sweet potato, mushroom and goats cheese was a hit for something a bit different. We had some really nice wine and a great cocktail....and sitting opposite the bar I couldn't help but admire how well put together and well organised it was. A really first class bar and barman! The service was also very attentive, respectful, informed and above all else friendly and well organised. We finished with a couple of desserts; chocolate ball filled with mascarpone mousse and bread pudding (not the fancy one). I have to say the chocolate ball one was one of, if not the best desserts I've ever had. Special note also to the valet guy on the door who couldn't have been more professional and courteous.
